Ingredients
- 1 cup sun-dried tomatoes (packed in oil, drained)
- 2 tablespoons olive oil (or reserved oil from the sun-dried tomatoes)
- 2 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Optional: ¼ cup grated Parmesan cheese
Instructions
- Place the sun-dried tomatoes, olive oil, garlic, basil, parsley, and lemon juice in a food processor.
- Blend until smooth, stopping occasionally to scrape down the sides of the bowl.
- If using Parmesan cheese, add it to the mixture and blend again until fully incorporated.
