Description

Fluffy, buttery, and packed with fresh herbs, these Herbed Cottage Cheese Biscuits are the perfect savory addition to any meal. The cottage cheese keeps them moist and tender, while fresh herbs bring a burst of flavor. Quick and easy to make, they're ideal for breakfast, brunch, or as a side for soups and stews.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • 6 tablespoons unsalted butter, cold and cubed
  • 1 cup cottage cheese
  • ¼ cup fresh herbs (parsley, chives, dill, or a mix), finely chopped
  • ⅓ cup milk (plus extra for brushing)

Instructions

  • Preheat & Prepare: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
  • Cut in Butter: Using a pastry cutter or fork, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  • Add Wet Ingredients: Stir in cottage cheese, fresh herbs, and milk. Mix until just combined—do not overmix.
  • Form Dough: Turn dough onto a lightly floured surface and gently knead a few times. Pat or roll to ¾-inch thickness.
  • Cut Biscuits: Use a round cutter or glass to cut out biscuits. Re-roll scraps as needed.
  • Bake: Place biscuits on the prepared baking sheet, spacing them 1 inch apart. Brush tops with milk. Bake for 12-15 minutes, or until golden brown.
  • Serve: Remove from oven, let cool slightly, and enjoy warm with butter or honey.

Notes

  • For Extra Flakiness: Keep butter very cold and avoid overworking the dough.
  • Customizations: Add shredded cheese, red pepper flakes, or lemon zest for extra flavor.
  • Storage: Keep in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
  • Freezing: Store baked biscuits in an airtight bag for up to 3 months. Reheat in the oven at 350°F (175°C) for 5-7 minutes.
