Description

Indulge in a decadent breakfast or brunch with this Cream Cheese Stuffed French Toast, complemented by a sweet and tangy homemade blackberry compote. A perfect balance of creamy and fruity flavors wrapped in warm, crispy French toast!

Ingredients

  • 8 slices of thick bread (preferably challah or brioche)
  • 1/2 cup cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup milk
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter (for cooking)
  • 1 1/2 cups fresh or frozen blackberries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1/4 cup water

Instructions

  1. In a small bowl, mix together cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture onto 4 slices of bread, then top with the remaining 4 slices to make sandwiches.
  3. In a shallow dish, whisk together the eggs, milk, and cinnamon.
  4. Heat a large skillet or griddle over medium heat and add butter to coat the surface.
  5. Dip each cream cheese sandwich into the egg mixture, ensuring both sides are coated, then cook in the skillet for 3-4 minutes per side, or until golden brown and crispy.
  6. While the French toast is cooking, make the blackberry compote. Combine blackberries, sugar, lemon juice, and water in a saucepan over medium heat. Stir occasionally and simmer for 10 minutes, until the berries soften and the sauce thickens.
  7. Serve the French toast topped with the warm blackberry compote.

Notes

  • Challah or brioche bread works best for this recipe due to its soft and rich texture.
  • Use fresh or frozen blackberries as per availability.
  • Adjust sugar in the blackberry compote based on your sweetness preference.
