- 1 and 3/4 cups (218g) plain/all-purpose flour
- 1/4 cup (25g) cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons cornflour/cornstarch
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (100g) caster/granulated sugar
- 1/4 cup (50g) light brown sugar
- 1 large egg
- 4 tablespoons instant coffee granules
- 1 tablespoon hot water
- 1 cup (175g) chocolate chips, plus extra for topping

- Preheat Oven: Preheat to 180°C (350°F or Gas 4) and line a baking tray with parchment paper or a silicone mat.
- Prepare Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, cornflour, salt, and 2 tablespoons of coffee granules.
- Combine Wet Ingredients: In a large bowl, whisk together melted butter and both sugars until smooth. Add the egg and mix well.
- Dissolve Coffee: In a small bowl, dissolve the remaining coffee granules in hot water. Add to the wet ingredients and stir until combined.
- Mix Dough: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
- Form Cookies: Roll dough into 1.5-ounce balls (about 2 tablespoons). Place on the prepared tray and press extra chocolate chips on top.
- Bake: Bake for 10–12 minutes. Cool on the tray for 5–10 minutes before transferring to a wire rack
Notes
- For a stronger coffee flavor, use up to 5 tablespoons of instant coffee.
- Gluten-free? Replace all-purpose flour with a gluten-free blend.
- Add nuts (walnuts, pecans) or swap chocolate chips for white chocolate for variety.
