  • 1 and 3/4 cups (218g) plain/all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cornflour/cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) caster/granulated sugar
  • 1/4 cup (50g) light brown sugar
  • 1 large egg
  • 4 tablespoons instant coffee granules
  • 1 tablespoon hot water
  • 1 cup (175g) chocolate chips, plus extra for topping

  1. Preheat Oven: Preheat to 180°C (350°F or Gas 4) and line a baking tray with parchment paper or a silicone mat.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, cornflour, salt, and 2 tablespoons of coffee granules.
  3. Combine Wet Ingredients: In a large bowl, whisk together melted butter and both sugars until smooth. Add the egg and mix well.
  4. Dissolve Coffee: In a small bowl, dissolve the remaining coffee granules in hot water. Add to the wet ingredients and stir until combined.
  5. Mix Dough: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chocolate chips.
  6. Form Cookies: Roll dough into 1.5-ounce balls (about 2 tablespoons). Place on the prepared tray and press extra chocolate chips on top.
  7. Bake: Bake for 10–12 minutes. Cool on the tray for 5–10 minutes before transferring to a wire rack

Notes

  • For a stronger coffee flavor, use up to 5 tablespoons of instant coffee.
  • Gluten-free? Replace all-purpose flour with a gluten-free blend.
  • Add nuts (walnuts, pecans) or swap chocolate chips for white chocolate for variety.
