Description

A delicious and savory dish where tender chicken breasts are stuffed with a rich, garlicky mushroom filling and topped with melted cheese. Perfect for a special dinner!


Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon butter

8 oz mushrooms, sliced

2 cloves garlic, minced

1/4 cup cream cheese, softened

1/4 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil and butter in a skillet over medium heat. Add the sliced mushrooms and cook for 5-7 minutes, until softened and browned.
  3. Add the garlic and cook for 1 more minute until fragrant.
  4. Stir in the cream cheese, mozzarella, Parmesan, thyme, salt, and pepper. Cook until the cheese is melted and the mixture is well combined. Remove from heat and set aside.
  5. Carefully cut a pocket into each chicken breast, being careful not to cut all the way through.
  6. Stuff each chicken breast with the cheesy mushroom mixture.
  7. Heat a little more olive oil in the same skillet over medium-high heat. Sear each stuffed chicken breast for 2-3 minutes per side until golden brown.
  8. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Garnish with fresh parsley and serve immediately.

Notes

  • Make sure not to overfill the chicken breasts to prevent the filling from spilling out during cooking.
  • Use an oven-safe skillet if you want to transfer directly from stovetop to oven.
  • You can use other herbs like rosemary or basil to suit your taste.
