Ingredients
1 1/2 cups walnuts, chopped
1/2 cup almond flour
1/4 cup shredded unsweetened coconut
1/4 cup coconut oil, melted
10 medjool dates, pitted
1 tablespoon maple syrup
1 teaspoon vanilla extract
Pinch of sea salt
Instructions
- In a food processor, combine the walnuts, almond flour, shredded coconut, and sea salt. Pulse until the mixture resembles coarse crumbs.
- Add the pitted dates, maple syrup, vanilla extract, and melted coconut oil. Process until everything is well combined and sticky.
- Press the mixture into the bottom of an 8x8-inch baking dish lined with parchment paper, spreading it out evenly.
- Refrigerate the mixture for at least 2 hours to firm up.
- Once set, slice into bars and serve.
