  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 bag (9.25 oz) Fritos corn chips
  • 2 cups shredded Mexican blend cheese
  • Taco toppings (sour cream, guacamole, jalapeños, etc.)

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Stir in taco seasoning, black beans, and corn. Simmer for 5-7 minutes until heated through.
  4. Spread a layer of Fritos in the bottom of a 9x13 inch baking dish.
  5. Top with half of the beef mixture and half of the shredded cheese.
  6. Repeat with remaining Fritos, beef mixture, and cheese.
  7. Bake for 20-25 minutes, until cheese is melted and bubbly.
  8. Top with your favorite taco toppings and serve!
