Ingredients

1 cup fresh spinach, chopped

4 oz vegan cream cheese, softened

1/4 cup nutritional yeast (or grated vegan Parmesan alternative)

1 clove garlic, minced

1/4 tsp black pepper

1/8 tsp salt

1/2 tsp onion powder

1 sheet vegan puff pastry, thawed

1 tbsp plant-based milk, for brushing


Instructions

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, mix chopped spinach, vegan cream cheese, nutritional yeast, garlic, black pepper, salt, and onion powder until well combined.

  3. Roll out the puff pastry on a floured surface and cut into 12 squares.

  4. Add a spoonful of filling to the center of each square.

  5. Fold into triangles and press edges to seal; crimp with a fork for a decorative edge.

  6. Place on baking sheet and brush with plant-based milk.

  7. Bake for 12–15 minutes until golden and puffed.

  8. Let cool slightly and serve warm.

Notes

  • For a spicier kick, add red pepper flakes or jalapeños to the filling.
  • You can substitute with cashew cheese or add chopped mushrooms or bell peppers for variety.
  • Frozen spinach can be used—just thaw and squeeze out excess liquid first.
  • Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 2 months. Reheat at 350°F for 10 minutes.
