Description

This Sun-Dried Tomato Spread is a flavorful, Mediterranean-inspired spread that combines rich sun-dried tomatoes with aromatic garlic, fresh herbs, and lemon juice. Perfect as a dip or spread, it’s ideal for crackers, sandwiches, or appetizers. This easy-to-make spread is customizable and can be served vegan or with Parmesan for added richness.


Ingredients

  • 1 cup sun-dried tomatoes (packed in oil, drained)
  • 2 tablespoons olive oil (or reserved oil from the sun-dried tomatoes)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  • Place the sun-dried tomatoes, olive oil, garlic, basil, parsley, and lemon juice in a food processor.
  • Blend until smooth, stopping occasionally to scrape down the sides of the bowl.
  • If using Parmesan cheese, add it to the mixture and blend again until fully incorporated.
  • Taste the spread and adjust seasoning with salt and pepper as needed.
  • Transfer the spread to a serving bowl and garnish with additional herbs if desired.
  • Serve with crusty bread, crackers, or as a sandwich spread.

Notes

  • For a vegan version, omit the Parmesan cheese.
