Description

A refreshing and light cheesecake that combines the sweetness of summer berries with juicy peaches, all on a creamy and delicious cheesecake base. Perfect for summer gatherings or a delightful dessert after any meal!


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large peaches, peeled and sliced
  • 1 ½ cups mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust. Bake for 8-10 minutes, or until golden brown. Remove from oven and let cool.
  3. In a large bowl, beat together the cream cheese, sour cream, powdered sugar, and vanilla extract until smooth and creamy.
  4. Pour the cream cheese mixture over the cooled crust and smooth the top with a spatula.
  5. Bake for 45-50 minutes, or until the cheesecake is set and lightly golden on top. Allow to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
  6. In a small saucepan, combine the peaches, berries, honey, and lemon juice. Cook over medium heat for 5-7 minutes, or until the fruit softens and releases its juices. Let the mixture cool to room temperature.
  7. Once the cheesecake has chilled, top it with the berry and peach mixture. Garnish with fresh mint leaves if desired.
  8. Slice, serve, and enjoy!
