1 cup whipped cream (store-bought or homemade)

1 cup fresh strawberries (hulled and sliced)

  1. Preheat your oven to 350°F (175°C). Grease a 15x10-inch jelly roll pan and line it with parchment paper.

  2. In a bowl, whisk together flour, baking powder, and salt.

  3. In another bowl, beat eggs and sugar until thick and pale. Add vanilla extract and milk, mixing until combined.

  4. Gradually fold the dry ingredients into the egg mixture until just combined.

  5. Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes until golden and a toothpick comes out clean.

  6. While baking, dust a clean kitchen towel with powdered sugar. Once the cake is done, immediately invert it onto the towel, peeling off the parchment paper. Carefully roll the cake up in the towel, then let it cool completely.

  7. Beat cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in whipped cream.

  8. Once cooled, unroll the cake gently. Spread the cheesecake mixture over the cake, leaving a small border. Arrange the strawberries on top.

  9. Roll the cake back up without the towel and wrap it in plastic wrap. Refrigerate for at least an hour.

  10. Slice the cake into sushi-style pieces and serve. Optionally, garnish with more strawberries or whipped cream.
