Description

A creamy and protein-rich ice cream that combines the natural sweetness of strawberries with the smooth texture of cottage cheese, offering a healthier twist on a classic dessert. This frozen treat is perfect for warm days when you crave something refreshing yet nutritious.

Ingredients

  • 1 cup fresh strawberries, sliced
  • 3 tablespoons sugar or monk fruit sweetener
  • 1 cup low-fat cottage cheese
  • ¼ cup 2% milk

Instructions

  • Macerate the Strawberries – In a small bowl, mix the sliced strawberries with the sugar or monk fruit sweetener. Let them sit for 10-15 minutes, stirring occasionally, until they release their juices.
  • Blend the Mixture – In a blender or food processor, combine the macerated strawberries (including their juices), cottage cheese, and milk. Blend until smooth and creamy.
  • Freeze the Mixture – Pour the blended mixture into a Ninja Creami pint container, ensuring not to exceed the maximum fill line. Secure the lid and freeze for at least 24 hours.
  • Process in Ninja Creami – Remove the frozen pint, take off the lid, and place it into the Ninja Creami machine. Secure the outer bowl lid and select the "Lite Ice Cream" function.
  • Adjust Consistency if Needed – If the ice cream appears crumbly, reinsert it into the machine and select the "Re-spin" function. If still crumbly, add a tablespoon of milk and re-spin.
  • Serve – Scoop into bowls and enjoy immediately. Optionally, garnish with additional fresh strawberries.

Notes

  • For a creamier texture, use full-fat cottage cheese and whole milk.
  • Sweetener options: Use honey, maple syrup, or erythritol as substitutes.
  • Dairy-Free Option: Use plant-based cottage cheese and milk.
  • Storage: Store in the Ninja Creami pint container for up to 2 weeks. Let it sit for 5-10 minutes or use the "Re-spin" function if it hardens too much.
