Description

These Rice Krispie Treat Cookies are a fun and delicious twist on the classic treat. Soft, chewy, and filled with gooey marshmallows, these cookies offer the nostalgic flavor of Rice Krispies combined with a sweet, buttery dough. With a crispy, golden exterior and gooey marshmallow center, these cookies are perfect for any occasion!

Ingredients

Ingredients:

  • 1 stick butter, room temperature
  • ½ cup sugar
  • ½ cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ¾ cups flour
  • ½ teaspoon baking powder
  • ½ cup Rice Krispies cereal
  • 1 cup marshmallows

Instructions

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the butter, sugar, and brown sugar together in a large bowl until smooth and creamy.
  3. Mix in the egg and vanilla extract until fully combined.
  4. Gradually add the flour and baking powder, mixing until the dough forms.
  5. Gently fold in the Rice Krispies cereal.
  6. Use a cookie scoop to portion the dough. Flatten each dough ball, place a marshmallow in the center, and roll the dough around the marshmallow. Coat the dough ball in additional Rice Krispies cereal.
  7. Place the dough balls on the prepared baking sheet and bake for 12-14 minutes, until golden on the edges and slightly gooey in the center.
  8. Let the cookies cool slightly on the baking sheet before serving.

Notes

  • For extra texture, try adding chocolate chips, nuts, or graham crackers for a s'mores twist.
  • If the dough is too sticky, refrigerate for 10-15 minutes before shaping.
  • These cookies can be stored in an airtight container at room temperature for up to 3 days, or frozen for up to 1 month.
