Ingredients

For the Chicken:

2 large chicken breasts, cut into halves (to make 4 pieces)

1/2 cup (50 g) grated Parmesan cheese

1/2 cup (60 g) panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

For the Vegetables:

2 cups baby potatoes, quartered

1 cup broccoli florets

1 cup baby carrots, halved lengthwise

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and black pepper, to taste


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. In a large bowl, toss the baby potatoes, broccoli florets, and baby carrots with olive oil, garlic powder, salt, and black pepper. Spread them evenly on one side of the sheet pan.
  3. In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and black pepper. Brush the chicken pieces with olive oil, then dredge them in the Parmesan breadcrumb mixture, pressing gently to coat.
