1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine peanut butter, sweetener, egg, vanilla extract, baking soda, and salt. Stir until fully incorporated.
- Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the baking sheet, spacing them about 2 inches apart.
- Use a fork to gently press down on each ball, creating a crisscross pattern.
- Bake for 8-10 minutes, or until the cookies are golden around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store the cookies in an airtight container at room temperature for up to a week.
- If using erythritol, the cookies may have a slight cooling effect.
- Ensure the peanut butter is unsweetened and natural for the best keto results.
- Adjust the sweetness level to your preference if using different keto-friendly sweeteners.
