Description

Soft, fluffy, and bursting with fresh blueberries, these baked blueberry donuts are a delightful treat perfect for breakfast or a sweet snack.

Ingredients

1/2 cups all-purpose flour

1/2 cup granulated sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

2/3 cup milk (dairy or non-dairy)

2 large eggs

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan or lightly spray with non-stick cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, beat the milk, eggs, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries.
  6. Spoon the batter into the donut pan, filling each mold about 3/4 full.
  7. Bake for 12-15 minutes, or until a toothpick inserted into a donut comes out clean.
  8. Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a sweeter flavor, you can glaze the donuts with a simple icing or dust them with powdered sugar.
  • You can substitute fresh blueberries with frozen ones, but ensure they are thawed and patted dry.
  • These donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • To make this recipe gluten-free, substitute all-purpose flour with a 1:1 gluten-free flour blend.
