- Black pepper – ½ tsp
- Red pepper flakes (optional) – ¼ tsp
- Crumbled feta cheese – ½ cup

- Bring a pot of salted water to a boil.
- Add orzo and cook according to package instructions until al dente.
- Drain and set aside.
2. Sear the Chicken
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Season chicken with salt and black pepper.
- Cook for 5-7 minutes until browned and cooked through.
- Remove from skillet and set aside.
3. Sauté the Vegetables
- In the same skillet, heat 1 tbsp olive oil.
- Sauté garlic for 1 minute until fragrant.
- Add grape tomatoes and cook for 3-4 minutes until softened.
- Stir in kalamata olives and cook for 2 more minutes.
4. Deglaze the Pan (Optional)
- Pour in white wine, scraping up any browned bits.
- Simmer for 2-3 minutes until reduced.
5. Combine Ingredients
- Return chicken to skillet.
- Add cooked orzo, spinach, pine nuts, oregano, and red pepper flakes.
- Stir and cook for 2 minutes until spinach wilts.
6. Finish and Serve
- Remove from heat.
- Stir in basil and parsley.
- Sprinkle with feta cheese.
- Serve warm with extra herbs if desired.
