Bring the taste of the islands to your dinner table with this easy Hawaiian Chicken Bake! Juicy chicken breasts are topped with tangy barbecue sauce, sweet pineapple, and melty mozzarella for a tropical, flavor-packed meal that’s perfect for busy weeknights. This family-friendly bake is a one-dish wonder that’s both satisfying and simple to prepare.

Ingredients

Ingredients:

2 lbs chicken breast, boneless, skinless

1/2 tsp salt

1/4 tsp ground black pepper

3 cloves garlic, pressed

1/4 cup barbecue sauce

20 oz pineapple rings (1 can, drained)

1 cup mozzarella cheese, shredded

Garnish: 3 green onions, chopped

Instructions

Instructions:

Preheat oven to 350°F (175°C).

Place chicken breasts flat in a large baking dish. Season with salt, pepper, and pressed garlic.

Spread barbecue sauce evenly over the chicken.

Top with drained pineapple rings.

Sprinkle mozzarella cheese over the top.

Bake for 30–40 minutes, or until chicken reaches an internal temperature of 165°F.

Remove from oven, garnish with chopped green onions, and serve warm.

Notes

  • For a spicier version, add jalapeño slices or a dash of hot sauce to the barbecue sauce.

  • Swap mozzarella with pepper jack or cheddar for a flavor twist.

  • Fresh pineapple can be used instead of canned.

  • Use boneless, skinless chicken thighs for a juicier option.

  • To make ahead, assemble and refrigerate, then bake when ready.

  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
