Instructions
- In a large mixing bowl, whisk together olive oil, Greek yogurt, lemon zest, lemon juice, garlic, oregano, coriander, onion powder, salt, and pepper.
- Add chicken breasts to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 24 hours.
- About 30 minutes before cooking, remove the chicken from the refrigerator to bring it to room temperature.
- Preheat the oven to 400°F. Lightly oil a grill pan and heat it over medium-high heat on the stovetop.
- Sear the chicken on one side for 5 minutes, then flip and transfer the pan to the oven. Bake for 15 minutes or until the chicken reaches an internal temperature of 165°F.
- Let the chicken rest for 5 minutes before serving.
