Ingredients

  • ¼ cup olive oil
  • ½ cup Greek yogurt (plain)
  • Zest of 1 lemon
  • Juice of 3 lemons
  • 5 cloves garlic (minced or pressed)
  • 2 tablespoons dried oregano
  • 1 teaspoon coriander
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 lbs. chicken breast

Instructions

  • In a large mixing bowl, whisk together olive oil, Greek yogurt, lemon zest, lemon juice, garlic, oregano, coriander, onion powder, salt, and pepper.
  • Add chicken breasts to the bowl and coat them evenly with the marinade. Cover and refrigerate for at least 30 minutes, or up to 24 hours.
  • About 30 minutes before cooking, remove the chicken from the refrigerator to bring it to room temperature.
  • Preheat the oven to 400°F. Lightly oil a grill pan and heat it over medium-high heat on the stovetop.
  • Sear the chicken on one side for 5 minutes, then flip and transfer the pan to the oven. Bake for 15 minutes or until the chicken reaches an internal temperature of 165°F.
  • Let the chicken rest for 5 minutes before serving.
