Description

Ingredients

2 pounds baby potatoes, halved or quartered

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the halved or quartered potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet, ensuring they are not crowded.
  4. Roast in the preheated oven for 30-40 minutes, flipping once halfway through, until the potatoes are golden brown and crispy on the outside, and tender on the inside.
