  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

  2. Season the Chicken: Pat chicken dry. Mix Italian seasoning, smoked paprika, salt, and pepper. Rub chicken with olive oil, then coat evenly with seasoning.

  3. Prepare Potatoes: In a large bowl, toss halved potatoes with olive oil, garlic, Parmesan, salt, and pepper.

  4. Assemble: Place chicken on one side of the baking sheet. Spread potatoes on the other side in a single layer.

  5. Bake: Roast for 25–30 minutes, flipping potatoes halfway through. Chicken should reach an internal temp of 165°F (74°C).

  6. Optional Broil: In the last 5 minutes, sprinkle extra Parmesan and broil for a golden crust.

  7. Garnish & Serve: Top with fresh parsley and serve hot.
