  1. Prepare the Potatoes: Preheat your oven to 400°F (200°C). Place the diced potatoes on a baking sheet. Drizzle with olive oil, sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly. Roast for 20-25 minutes, flipping halfway through, until golden and crispy.

  2. Prepare the Steak Bites: While the potatoes are roasting, heat olive oil in a large skillet over medium-high heat. Season the steak with salt, pepper, rosemary, and thyme. Add steak cubes to the skillet and sear for 3-4 minutes per side, or until browned and cooked to your desired level of doneness. Remove from skillet and set aside.
