  3. Whip Eggs and Sugars: In a medium bowl, whisk caster sugar, demerara sugar, and eggs on high speed until light, thick, and fluffy.
  4. Combine Dry Ingredients: Sift together flour, cocoa powder, baking powder, salt, and chocolate chips in a separate bowl.
  5. Integrate Chocolate Mixture: Gradually fold in the melted chocolate mixture into the whipped egg-sugar mix. Stir gently to maintain airiness.
  6. Add Dry Ingredients: Carefully fold the dry ingredients into the wet mixture with a spatula until just combined.
  7. Bake the Brookies: Scoop tablespoons of batter onto the prepared tray, leaving space for spreading. Bake for 12–14 minutes until set and crackly on top.
