Description

A delicious, no-bake dessert that combines the classic flavors of s'mores with the cool, creamy texture of ice cream, perfect for hot summer days.


Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup melted coconut oil or butter

2 tablespoons honey or maple syrup

2 cups vanilla Greek yogurt or non-dairy yogurt

1/2 cup mini chocolate chips

1/2 cup mini marshmallows

1/4 cup chocolate syrup (optional)


Instructions

  1. Line a baking dish (8x8 inches works well) with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted coconut oil (or butter), and honey (or maple syrup). Stir until the crumbs are well coated and the mixture sticks together when pressed.
  3. Press the graham cracker mixture evenly into the bottom of the prepared baking dish to form a crust. Set aside.
  4. In a separate bowl, stir together the yogurt and mini chocolate chips. Spread the yogurt mixture evenly over the graham cracker crust.
  5. Sprinkle the mini marshmallows over the yogurt layer and drizzle with chocolate syrup, if desired.
  6. Cover the dish with plastic wrap and freeze for at least 3-4 hours, or until firm.
  7. Once frozen, cut into squares and serve immediately. Enjoy your frozen s'mores!
