A delicious, no-bake dessert that combines the classic flavors of s'mores with the cool, creamy texture of ice cream, perfect for hot summer days.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup melted coconut oil or butter
2 tablespoons honey or maple syrup
2 cups vanilla Greek yogurt or non-dairy yogurt
1/2 cup mini chocolate chips
1/2 cup mini marshmallows
1/4 cup chocolate syrup (optional)
Instructions
- Line a baking dish (8x8 inches works well) with parchment paper.
- In a medium bowl, combine graham cracker crumbs, melted coconut oil (or butter), and honey (or maple syrup). Stir until the crumbs are well coated and the mixture sticks together when pressed.
- Press the graham cracker mixture evenly into the bottom of the prepared baking dish to form a crust. Set aside.
- In a separate bowl, stir together the yogurt and mini chocolate chips. Spread the yogurt mixture evenly over the graham cracker crust.
- Sprinkle the mini marshmallows over the yogurt layer and drizzle with chocolate syrup, if desired.
- Cover the dish with plastic wrap and freeze for at least 3-4 hours, or until firm.
- Once frozen, cut into squares and serve immediately. Enjoy your frozen s'mores!

- You can use non-dairy yogurt for a vegan option.
- Adjust sweetness by using honey or maple syrup as needed.
