- In a large bowl, combine the ground beef, caramelized onions (reserving some for topping), breadcrumbs, beef broth, egg, and French onion soup mix. Mix gently until just combined to avoid overworking the meat.
- Shape the mixture into a loaf and place it in a greased loaf pan or on a parchment-lined baking sheet.
- Create a small well in the center of the loaf and sprinkle in half the shredded cheese. Cover with the remaining cheese and the reserved caramelized onions.
- Bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley and serve warm.
