2 yellow onions, chopped
2 poblano peppers, seeded and chopped
1 tablespoon chili powder
2 teaspoons chipotle chile powder
1 tablespoon garlic powder
1 tablespoon smoked paprika

1 can (28 ounce) crushed fire roasted tomatoes
1 can (8 ounce) tomato paste
1 can (4 ounce) diced green chilies
2-3 tablespoons Gochujang chili paste, to taste
3 tablespoons salted butter
3 tablespoons tamari/soy sauce
2-3 cups chicken or beef broth
6 ounces cream cheese (at room temperature)
2 cups shredded cheddar cheese
1 can mixed chili beans, drained
Cilantro, green onion, avocado, and Greek yogurt for serving

In a large Dutch oven, heat the ground beef over medium-high heat. Break it up as it cooks until browned. Once browned, add the chopped onions and cook for 5 minutes, stirring occasionally.

Add the chopped poblano peppers, chili powder, chipotle chile powder, garlic powder, smoked paprika, and cumin. Cook for an additional 5 minutes, or until fragrant.

Stir in the crushed fire-roasted tomatoes, tomato paste, Gochujang chili paste, butter, and diced green chilies. Add 2 cups of broth and tamari (or soy sauce) to the mixture. Stir everything together until well combined.

Partially cover the pot, reduce the heat to low, and let the chili simmer for 1-2 hours, stirring occasionally. For deeper flavor, simmer longer.

Towards the end of cooking, stir in the cream cheese, shredded cheddar cheese, and chili beans. Continue cooking for about 5 more minutes until the cheese is fully melted and incorporated into the chili.
