Description

Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup breadcrumbs (use gluten-free breadcrumbs for a GF option)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs, beaten

1 tablespoon olive oil


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each cauliflower floret into the beaten egg, allowing any excess to drip off, and then coat it in the breadcrumb mixture, pressing gently to ensure it sticks.
  5. Place the coated cauliflower on the prepared baking sheet in a single layer. Drizzle with olive oil.
