Ingredients
1 medium head of cauliflower, cut into bite-sized florets
1 cup breadcrumbs (use gluten-free breadcrumbs for a GF option)
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and pepper, to taste
2 large eggs, beaten
1 tablespoon olive oil
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each cauliflower floret into the beaten egg, allowing any excess to drip off, and then coat it in the breadcrumb mixture, pressing gently to ensure it sticks.
- Place the coated cauliflower on the prepared baking sheet in a single layer. Drizzle with olive oil.
- Bake for 25-30 minutes, flipping the cauliflower halfway through, until golden brown and crispy.
- Remove from the oven and serve warm with your favorite dipping sauce.
