Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 garlic cloves, minced
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in the chicken broth and bring to a simmer. Cook for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Cook for another 2-3 minutes until the sauce thickens slightly.
- Return the shrimp to the skillet, toss to coat with the sauce, and cook for 1-2 minutes to heat through.
- Season with salt and pepper to taste, and garnish with fresh parsley before serving.
