Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 head cauliflower, chopped
  • 4 cups vegetable broth
  • 1 cup cottage cheese
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until softened.
  • Add chopped cauliflower to the pot and cook for 5 minutes, stirring occasionally.
  • Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes, or until cauliflower is tender.
  • Blend the soup using an immersion blender until smooth, or transfer in batches to a blender.
  • Stir in the cottage cheese and ground cumin, mixing until creamy.
  • Season with salt and pepper to taste.
  • Ladle soup into bowls and garnish with chopped chives. Serve warm and enjoy!
