Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 head cauliflower, chopped
- 4 cups vegetable broth
- 1 cup cottage cheese
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until softened.
- Add chopped cauliflower to the pot and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes, or until cauliflower is tender.
- Blend the soup using an immersion blender until smooth, or transfer in batches to a blender.
- Stir in the cottage cheese and ground cumin, mixing until creamy.
- Season with salt and pepper to taste.
- Ladle soup into bowls and garnish with chopped chives. Serve warm and enjoy!
