Description
This cucumber salsa is a great way to use all those summer cucumbers! Jalapeño adds a little zing and lime juice adds a refreshing burst of flavor.
Ingredients
2 medium cucumbers - peeled, seeded, and chopped
2 medium tomatoes, chopped
½ cup chopped green bell pepper
1 jalapeño pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
½ teaspoon dried dill weed
½ teaspoon salt
1 (12 ounce) package tortilla chips
Instructions
- Gather the ingredients.
- Stir cucumbers, tomatoes, green pepper, jalapeño pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt together in a medium bowl; cover and refrigerate until chilled, about 30 minutes to 1 hour.
- Serve with tortilla chips.
Notes
- For a spicier salsa, leave the seeds in the jalapeño pepper.
- This salsa can be served immediately after preparation, although chilling enhances the flavor.
