Ingredients

For the Oatmeal:

  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup milk of choice
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 egg

For the Streusel Topping:

  • 2 tablespoons almond flour
  • 2 tablespoons rolled oats
  • 1 tablespoon coconut sugar (or brown sugar)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon coconut oil or butter, softened

Instructions

Preheat & Prep:
Preheat oven to 375°F (190°C) and grease an 8x8-inch baking dish.

Mix Dry Ingredients:
In a large bowl, combine oats, baking powder, cinnamon, and salt.

Combine Wet Ingredients:
In a separate bowl, whisk together milk, applesauce, maple syrup, vanilla extract, and egg.

Assemble:
Pour wet ingredients into dry ingredients and mix well. Spread the oatmeal mixture evenly in the baking dish.

Make Streusel:
In a small bowl, mix almond flour, rolled oats, coconut sugar, cinnamon, and softened coconut oil/butter. Sprinkle over oatmeal mixture.
