Description

These Cinnamon Apple Walnut Muffins are a delicious blend of warm spices, sweet apples, and crunchy walnuts. They are gluten-free, grain-free, and perfect for a quick breakfast or snack.


Ingredients

2 cups almond flour

1/2 cup coconut flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

3 large eggs

1/4 cup honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 medium apple, peeled and diced

1/2 cup chopped walnuts


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease the muffin cups.
  2. In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat the eggs, honey, melted coconut oil, and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and stir to combine.
  5. Gently fold in the diced apple and chopped walnuts.
  6. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
