Description

These indulgent yet healthy no-bake bars are made with just a few simple ingredients, featuring a crunchy texture from oats and crisp rice, paired with rich chocolate and creamy peanut butter for a satisfying treat.


Ingredients

1 cup natural peanut butter (smooth or crunchy)

1/2 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

2 cups old-fashioned rolled oats

1 1/2 cups puffed rice cereal

1/2 cup dark chocolate chips (or dairy-free chocolate chips)

1 tablespoon coconut oil (optional)


Instructions

  1. Line an 8x8-inch baking pan with parchment paper or lightly grease it for easy removal.
  2. In a microwave-safe bowl, combine peanut butter and honey (or maple syrup). Microwave for 30 seconds, then stir until smooth and fully combined.
  3. Stir in the vanilla extract and salt.
  4. In a large bowl, mix together the oats and puffed rice cereal.
  5. Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated.
  6. Press the mixture into the prepared baking pan, making sure it’s tightly packed and even.
  7. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil (if using) in 20-second intervals, stirring in between until smooth.
  8. Pour the melted chocolate over the oat and peanut butter layer, spreading it evenly.
  9. Refrigerate for at least 1 hour, or until firm and set.
  10. Once set, remove from the pan and cut into bars. Store in the refrigerator for up to a week.
