Ingredients
1 cup peanut butter
1 cup sugar
1/4 cup corn syrup
1/2 teaspoon vanilla extract
4 cups cornflakes
1/2 cup chocolate chips
Instructions
- In a large saucepan, combine peanut butter, sugar, and corn syrup over medium heat. Stir continuously until the mixture is smooth and the sugar has dissolved, about 2-3 minutes.
- Remove from heat and stir in the vanilla extract.
- Gently fold in the cornflakes, ensuring each flake is coated with the peanut butter mixture.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, shaping them into cookie-like clusters.
- Allow the cookies to cool and set for about 30 minutes at room temperature.
- While the cookies cool, melt the chocolate chips in a microwave-safe bowl, stirring every 20 seconds until fully melted and smooth.
- Drizzle the melted chocolate over the cooled cookies.
- Let the chocolate set for another 10-15 minutes before serving.
Notes
- Ensure not to overheat the peanut butter mixture to avoid burning.
- These cookies can be stored in an airtight container at room temperature for up to a week.
- Feel free to use dark or milk chocolate chips based on your preference.
- Adjust the chocolate drizzle quantity based on your sweet preference.
