Description

This Chicken Mozzarella Bake is high in protein, keto, and gluten-free. It's the ultimate comfort food, combining tender chicken breasts, a vibrant tomato sauce, fragrant herbs, and melted mozzarella cheese for a symphony of flavors.


Ingredients

4 chicken breasts (boneless and skinless)

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

Salt & black pepper (to taste)

16 oz can chopped tomatoes

3 cloves garlic, minced

½ red onion, chopped

1 tsp oregano

1 cup shredded mozzarella

2-3 leaves basil

2 tbsp olive oil


Instructions

  1. Preheat your oven to 375 degrees F. Rinse the chicken breasts and pat them dry with paper towels.
  2. Make shallow criss-cross cuts in the chicken breasts, creating pockets for flavor, but do not cut all the way through.
  3. Place the chicken breasts into a baking dish and season with salt, pepper, Italian seasoning, onion powder, and garlic powder. Drizzle olive oil on top.
  4. In a mixing bowl, combine chopped tomatoes, minced garlic, chopped red onion, oregano, and a pinch of salt and pepper. Mix well.
  5. Pour the tomato mixture over the chicken in the baking dish, ensuring even coverage.
  6. Sprinkle shredded mozzarella cheese generously over the chicken and sauce.
  7. Bake the dish in the preheated oven for 25-30 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
  8. Turn on the broiler for a few minutes to brown the cheese if desired.
  9. Remove the dish from the oven and garnish with fresh basil leaves. Serve and enjoy!

Notes

  • To ensure even cooking, make sure the chicken breasts are of similar size.
  • You can substitute fresh tomatoes for canned chopped tomatoes if preferred.
