For the Chicken and Gravy:
-
Heat olive oil in a deep skillet or Dutch oven over medium heat. Brown the chicken thighs on each side for 3-4 minutes per side, then transfer them to a bowl.
-
In the same skillet, sauté diced onion and minced garlic until softened, about 5 minutes.
-
Add diced carrots and celery, sautéing for another 5 minutes.
-
Stir in butter and flour, cooking until the mixture forms a paste. Stir for about 2 minutes.
-
Add dried parsley, thyme, rosemary, sage, salt, pepper, chicken broth, and milk. Bring the mixture to a simmer to form a gravy.
-
Dice the browned chicken and return it to the skillet, simmering it in the gravy while you prepare the dumplings.
-
-
For the Dumplings:
-
In a separate bowl, combine flour, parsley, sugar, salt, baking powder, garlic powder, and black pepper.
-
Pour in milk and melted butter, stirring until just combined into a soft batter.

-
-
Serve hot and enjoy!
Notes
You can substitute chicken breasts for thighs, but thighs provide more flavor and tenderness.
The dish can be made ahead and stored in the fridge for 3 days.
Add more vegetables like peas or green beans for variation.
Leftovers can be reheated on the stove or in the microwave. Add a splash of milk or chicken broth to loosen the gravy.
