- Preheat & Prepare Pan: Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
- Mix Dry Ingredients: In a bowl, whisk together flour, cinnamon, baking soda, baking powder, salt, ginger, and nutmeg.
- Prepare Wet Ingredients: In a large bowl, beat butter, sugar, and brown sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
- Combine & Fold: Gradually mix dry ingredients into wet ingredients. Fold in shredded carrots.
- Bake: Spread batter evenly in the pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- Make Frosting: Beat cream cheese, butter, and vanilla extract until smooth. Gradually add powdered sugar until creamy.
- Frost & Serve: Spread frosting over the cooled cake, slice into bars, and enjoy!
