1.5 cups roughly chopped pecans, toasted if preferred

1/2 cup toffee bits (optional)

  2. Mix in eggs and vanilla extract until well combined.

  3. Gradually add flour, cinnamon, cornstarch, baking soda, and baking powder. Mix until just combined.

  5. Chill dough in the refrigerator for 30–45 minutes.

  6. Scoop and roll dough into balls. Dough may feel crumbly—use your hands to shape.

  8. Arrange on a parchment-lined baking sheet, spaced apart.
