Description

Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 tablespoon butter

1/2 cup chicken broth

1/2 cup heavy cream

1 (5.2 oz) package Boursin garlic and herb cheese

1/4 cup fresh parsley, chopped


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add the chicken broth, heavy cream, and Boursin cheese. Stir until the cheese melts and the sauce is smooth.
  5. Return the chicken breasts to the skillet, spooning some of the sauce over the top.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  7. Once cooked, remove from the oven and sprinkle with fresh parsley before serving.
