Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon butter
1/2 cup chicken broth
1/2 cup heavy cream
1 (5.2 oz) package Boursin garlic and herb cheese
1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Season both sides of the chicken breasts with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, melt butter over medium heat. Add the chicken broth, heavy cream, and Boursin cheese. Stir until the cheese melts and the sauce is smooth.
- Return the chicken breasts to the skillet, spooning some of the sauce over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
- Once cooked, remove from the oven and sprinkle with fresh parsley before serving.
