Description

A creamy and hearty casserole featuring tender chicken, sun-dried tomatoes, spinach, and a rich sauce, all baked to perfection. This comforting dish is perfect for a family dinner or meal prep!


Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup sun-dried tomatoes, chopped

2 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup fresh basil, chopped


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with garlic powder, onion powder, oregano, salt, and pepper.
  3. Sear the chicken in the skillet for 3-4 minutes on each side, or until golden brown. Remove the chicken and set it aside.
  4. In the same skillet, add the sun-dried tomatoes and spinach, cooking for 2-3 minutes until the spinach wilts.
  5. Add the heavy cream and Parmesan cheese, stirring until the sauce thickens slightly.
  6. Place the seared chicken breasts in a baking dish. Pour the creamy tomato-spinach sauce over the chicken.
  7. Sprinkle the mozzarella cheese on top and bake for 25-30 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
  8. Garnish with fresh basil before serving.

Notes

  • To save time, use pre-chopped sun-dried tomatoes and spinach.
  • Fresh basil adds a burst of flavor but can be substituted with dried basil if necessary.
