Ingredients

Ingredients:

1 ripe avocado, mashed

Juice of ½ lemon

Salt and freshly cracked black pepper, to taste

1 slice of whole-grain or sourdough bread, toasted

1 fresh egg, poached

2 slices smoked salmon

Fresh dill or chopped chives, for garnish

Optional: Red pepper flakes for heat

Instructions

Instructions:

  1. Make the Avocado Spread: Mash avocado in a small bowl. Add lemon juice, salt, and pepper. Mix well.

  2. Toast the Bread: Toast bread until golden and crisp.

  3. Poach the Egg: Simmer water with a splash of vinegar. Crack egg into a bowl, then gently slide into simmering water. Poach 3–4 minutes. Remove with slotted spoon and drain.

  4. Assemble the Toast: Spread avocado on toast, layer smoked salmon, and top with poached egg.

  5. Garnish: Add fresh dill or chives and optional red pepper flakes. Season to taste and serve immediately.

Notes

  • Vegetarian? Skip the salmon and add tomato or arugula.
  • Want it spicy? Add sriracha or chili flakes.
  • Dairy boost? Sprinkle with feta or goat cheese.
  • Best served fresh; avocado and poached eggs don’t store well once assembled.
