  3. Build the Broth:

    • Return the seared beef ribs to the pot.
    • Add beef broth, water, thyme, and bay leaf.
    • Bring to a boil, then reduce heat to low and simmer for 1-1.5 hours until the beef is tender.
  4. Add the Vegetables:

    • Stir in the carrots and apple chunks.
    • Simmer for an additional 30 minutes until the carrots are tender and the apple has softened.
  5. Adjust Seasoning & Serve:
