Description

Ajvar is a smoky, savory Balkan pepper spread made with roasted red bell peppers, eggplants, and garlic. This versatile, vegan, and gluten-free spread is perfect as a condiment, dip, or side dish. With its rich flavor and simple ingredients, it’s a delicious addition to any meal. Enjoy this authentic Balkan recipe with bread, grilled meats, or veggies, and customize it with optional chili flakes for a spicy kick. Ideal for meal prep and storage, Ajvar offers a bold flavor that's easy to make and even better when made in advance.

Ingredients

  • 6 large red bell peppers
  • 2 medium eggplants
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • Salt, to taste
  • Optional: 1/4 teaspoon chili flakes for a spicy version

Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the red bell peppers and eggplants on it.
  • Roast for 30-40 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
  • Remove from the oven and cover with plastic wrap or a lid to let steam for 10-15 minutes, which helps loosen the skins.
  • Peel off the skins from the peppers and eggplants, then remove the seeds.
  • In a food processor, combine the roasted vegetables, minced garlic, olive oil, vinegar, and salt. Blend until smooth or slightly chunky, as desired.
  • If using chili flakes, add them to the mixture and blend again briefly.
  • Transfer the ajvar to a jar or serving dish. Store in the fridge for up to a week or freeze for longer storage.

Notes

  • For an extra smoky flavor, grill the peppers and eggplants instead of roasting them in the oven.
  • You can adjust the seasoning and spice level to your preference by adding more garlic, salt, or chili flakes.
  • Ajvar is naturally vegan and gluten-free, making it a healthy choice for a wide range of diets.
