Ingredients
- 6 large red bell peppers
- 2 medium eggplants
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- Salt, to taste

Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the red bell peppers and eggplants on it.
- Roast for 30-40 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
- Remove from the oven and cover with plastic wrap or a lid to let steam for 10-15 minutes, which helps loosen the skins.
- Peel off the skins from the peppers and eggplants, then remove the seeds.
- In a food processor, combine the roasted vegetables, minced garlic, olive oil, vinegar, and salt. Blend until smooth or slightly chunky, as desired.
